DIY buttermilk raspberry summer cake


So I'm not sure if baking classifies as DIY, but I think it should, so it will. I made this cake a couple weeks ago, and though my impractical shoe choice and lack of caring for washing up may suggest, I am actually a domestic goddess.

Ok not really, but I like making cake almost as much as I like eating it, and this little slice of heaven is quite literally a slice of heaven. Here's the recipe, thank me laterz.

You will need:
130 grams all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
56 grams unsalted butter, softened
146 grams plus 22 grams sugar, divided
1/2 teaspoon pure vanilla extract
1/2 teaspoon finely grated lemon zest 
1 large egg
118 ml well-shaken buttermilk
140 grams fresh raspberries 
(you can use strawberries or most other fruits instead of raspberries if you want!)


Preheat oven to 200°C. Butter a 9-inch round cake pan.
Whisk together flour, baking powder, baking soda, and salt and set aside. In a bigger bowl, beat butter (wasn't that fun to say) and 146 grams sugar with an electric mixer until pale and fluffy, then beat in vanilla and zest. Add the egg and beat well.

At low speed, mix in flour mixture in three batches, alternating with buttermilk, beginning and ending with flour, and mixing until just combined.Spoon batter into cake pan, smoothing top. Scatter  raspberries evenly over top and sprinkle with remaining 22 grams sugar.
Bake until cake is golden and a wooden pick inserted into center comes out clean, 20 to 25 minutes. Cool in pan 10 minutes, then turn out onto a rack and cool for 10-15 minutes more.
Then, eat.
I personally enjoy this best with creamy vanilla ice cream, but then again I enjoy most things better with ice cream.

Make your own buttermilk: No need to buy buttermilk especially for this or any recipe. Add one tablespoon of vinegar or lemon juice to one cup of milk and let it sit until it clabbers, about 10 minutes = easy peasy buttermilk.

    Strangely enough, I just convinced myself that I am a domestic goddess too.
    I make some pretty good pancakes. So who cares if I can't cook or clean and hate doing laundry? Heehee

    This cake looks sooooo good.
    I want it NOW.
    Time to go beg and plead until someone consents to make it for me :D
